Haha, it looks just like my topology when I first started.
@addysonh there is a process called "baking" later on that will take all the details on your sculpture and transfer it to the new retopology mesh. This process works insanely well. The trunk really only needs a ring of 8-10 vertices going around it. The tusks could do with just 6 or 8. You will use a subdivision modifier later on which will make it nice and smooth.
Also, when going down a part of the model that will come to and end( the trunk, tusks, legs, etc...) Always use an even number of vertices/edges going around. The reason for this is that at the end you will have a ring you need to fill in with quads and odd numbered loops can not be filled with quads entirely.
